Chocolate cookies
Chocolate Cookies – crispy on the outside, slightly soft on the inside, and packed with delicious dark chocolate! This gluten-free version with tigernuts and coconut sugar is a great choice for healthier snacking. Quick to make, amazing in taste – just one hour of resting and a few minutes in the oven! 🍪
Ingredients:

1 egg |
1g ground vanilla bean |

60ml tigernut oil |
50g coconut sugar |
|
160g tigernut flour |
2g salt |
|
2g baking soda |
50g dark chocolate chunks |
Instructions:
- In a bowl, whisk together the egg, sugar, oil, and vanilla bean until thick and fluffy.
- Add tigernut flour, salt, and baking soda, and mix thoroughly.
- Fold in the dark chocolate chunks (we use 70% dark LYRA chocolate) with a spatula.
- Cover the bowl with plastic wrap and let the dough rest in a cool place for one hour.
- Line a baking tray with parchment paper.
- Divide the dough into 8 equal parts.
- Form each piece into a ball and press it down on the tray to shape into cookies.
- Bake in a preheated oven at 180°C (355°F) for 8–10 minutes.
- After baking, let the cookies rest on the tray for another 10 minutes to firm up.
