Banana Bread with Chocolate

Ingredients:

3 pcs bananas

115 g lactose-free plain yogurt

110 g tiger nut oil

2 large eggs

130 g tiger nut flour

4 g baking soda

40 g tapioca flour

2 g salt

3 g guar gum

100 g chocolate

Instructions:

  1. Mash the bananas in a large bowl and beat them with the eggs.
  2. Add the tiger nut oil, beat, add the yogurt and beat again.
  3. In a second bowl, mix the tiger nut flour, tapioca flour, guar gum, baking soda, and salt.
  4. Gradually whisk the dry ingredients into the wet mixture.
  5. Add chocolate chunks and gently stir by hand.
  6. Pour the batter into a loaf pan lined with baking paper.
  7. Bake in a preheated oven at 160°C (320°F) for 90–100 minutes. Check doneness with a toothpick.
  8. Let cool slightly, remove from the pan, and optionally drizzle with melted chocolate.
