Banana Bread with Chocolate
Banana bread with chocolate – a healthy and fluffy gluten-free treat! Made from tiger nut and tapioca flour, enriched with creamy plain yogurt and chunks of quality chocolate. Perfect for breakfast or as a dessert with coffee. 🍫🍌
Ingredients:

3 pcs bananas |
115 g lactose-free plain yogurt |

110 g tiger nut oil |
2 large eggs |
|
130 g tiger nut flour |
4 g baking soda |
|
40 g tapioca flour |
2 g salt |
|
3 g guar gum |
100 g chocolate |
Instructions:
- Mash the bananas in a large bowl and beat them with the eggs.
- Add the tiger nut oil, beat, add the yogurt and beat again.
- In a second bowl, mix the tiger nut flour, tapioca flour, guar gum, baking soda, and salt.
- Gradually whisk the dry ingredients into the wet mixture.
- Add chocolate chunks and gently stir by hand.
- Pour the batter into a loaf pan lined with baking paper.
- Bake in a preheated oven at 160°C (320°F) for 90–100 minutes. Check doneness with a toothpick.
- Let cool slightly, remove from the pan, and optionally drizzle with melted chocolate.
